About the Role

The Tortillería Manager is responsible for planning, directing, and managing the operations and performance of the tortillería department. This role ensures that products are consistently fresh, high-quality, and authentic, while also leading a team to provide extraordinary customer service. The Tortillería Manager drives sales, manages labor and inventory, and ensures compliance with company policies, food safety standards, and health regulations.

What You’ll Do

• Leadership & Supervision: Manage, train, and evaluate department employees; delegate tasks; and foster a positive, team-oriented environment.

• Customer Service: Smile, greet, and assist customers with tortilla and specialty product orders, ensuring exceptional service.

• Product Quality: Oversee cooking, grinding, frying, and preparation of masa and tortilla products to ensure consistency in quality, weight, and presentation.

• Merchandising: Keep displays full, rotate stock, and ensure accurate signage and attractive presentation.

• Operations & Inventory: Accurately project sales, manage payroll, review invoices, and order from approved vendors to maintain freshness and minimize waste.

• Compliance & Safety: Promote Vallarta’s Tortillería Safety Program, enforce company and health department regulations, and immediately address unsafe acts or equipment.

• Sanitation: Maintain a clean and organized work area, including sweeping, mopping, and cleaning equipment and supplies.

• Team Development: Mentor and support employees, conduct evaluations, recognize outstanding performance, and recommend promotions.

• Other Duties: Perform additional assignments as needed to support the department and store.

Physical Requirements

• Stand and walk for long periods (6–8 hours/day).

• Frequently bend, squat, twist, and reach above/below shoulders.

• Frequent use of hands for grasping, pushing, pulling, and fine manipulation.

• Lift and carry up to 25 lbs. frequently and up to 50 lbs. occasionally (dry corn, maseca).

• Heaviest item carried: 50 lbs.; longest distance: 10 feet.

• Work near cooking equipment, fryers, and tortilla machinery.

• Exposure to dust, gas, fumes, heat, and humidity.

• May be required to perform tasks at elevated levels (placing or retrieving items).

• May operate forklifts, carts, or other moving equipment.

What We’re Looking For

• 2+ years of tortillería experience or 1+ year of management experience.

• Knowledge of tortilla production from dry corn through finished product.

• Strong leadership, organizational, and mentoring skills.

• Ability to work in a fast-paced environment and achieve results through teamwork.

• Knowledge of tortillería equipment, ovens, fryers, and food safety standards.

• Basic computer skills (Excel, Word).

• Strong math skills for measurements, inventory, and pricing accuracy.

• Must be able to speak, read, write, and understand English.

• Must successfully pass food safety certification every 3 years.

• Must be able to transfer to other store locations within a reasonable commute.

• Must be legally authorized to work in the U.S.
